Makeover Rigatoni with Bacon and Asparagus

I started off the week with a recipe I could use as an easy tupperware lunch: Makeover Rigatoni with Bacon and Asparagus from my Taste of Home Most Requested Recipes issue.  This was a pretty simple one to make (it probably took me around an hour in the kitchen including prep time) and tastes great.  Plus it was great hot or cold, so it really was a great one to take to work.

As always, here is the recipe on their website, and here is my addendum:

  • I added a few more bacon strips.
  • I used apple smoked mozzarella (and used a lot more than 1/2 c., as well as more than 1/4 c. Parmigiano-Reggiano)
  • If I were to do this recipe again I either double the bacon, asparagus and sauce or half the noodles.  This is a personal thing — I’m not a huge fan of noodles in general, I consider them more as a vehicle for sauce, etc., so I prefer more “stuff” to noodles.
