Pineapple Banana Smoothie for a Happy 4th of July!

Since it’s the 4th of July I thought I’d go ahead and list four things that I’m grateful for right now:

(4) That I was able to take out enough student loans to study abroad in Italy, and consequently, that student loan interest rates did not take a hike this month.

(3) That I have had steady employment for the last 3.5 years.

(2) That the city I live in has such gorgeous hiking/walking/biking trails and that it is now finally starting to feel like summer.

(1)  That my dog is one of the few I’ve ever known not to be freaked out by fireworks.

And now, if you’ve living someplace with real heat, is a delicious smoothie find from interest.  I made a few changes because of what I had on hand in the fridge but it turned out delicious regardless.

2 c. frozen pineapple

1/2 c. ice cubes

1 banana

1/3 c. applesauce

1/2 c. honey & strawberry Greek yogurt

2 c. vanilla almond milk

blend.
