Summer Protein Salad

I’ve been missing/craving two things lately: my Nordstrom’s salad and my favorite salad from Italy (the rocket salad at Golden View Open Bar), so I decided to make a delicious stand in while I wait for my next opportunity to eat the real thing (the Nordstrom’s salad is only a couple of weeks away but it might take a bit longer to get that rocket salad in my belly again).  My salad ended up being super delicious, filling, and packed with protein.

Salad Ingredients*

2 c. Wild Arugula

1/2 can Corn

16ish Sugar Plum Tomatoes

1/2 Avocado (sliced)

3 oz. Wild Alaskan Salmon

1/2 c. Crab Meat

6 Fillets of Anchovies

1 Hard Boiled Egg (sliced)

Salad Dressing Ingredients

1 tbsp. Extra Virgin Olive Oil

1/2 tbsp. Black Truffle Oil

2 tbsp. Balsamic Vinegar

A couple pinches of salt

A pinch of red pepper

*Of course, you can always vary the ingredients/amounts to taste.
